Layered Meat Loaf

  • 30g butter
  • 1/2 onion
  • 1/2 red pepper
  • 1/2 garlic clove
  • 200g lean cooked beef
  • 30g freshly grated breadcrumbs
  • 50g short pasta
  • 100g bacon
  • 2 tbsp Hawkshead Relish Sun Dried Tomato and Garlic Chutney
  • Cheese sauce

Melt the butter in a pan and cook the pepper and onion for 3 minutes. Following this, add the garlic and cook and 1 more minute.

Trim the meat of fat and dice finely.

Make the breadcrumbs and add into the meat and add the onion, pepper, garlic.

Add the Sun Dried Tomato & Garlic Chutney.

Make a cheese sauce and cook the pasta.

When finished mix the cheese sauce and pasta together.

Layer the tin with bacon and put a line of meat mix in it.

Then put the pasta cheese in it with another line of meat mix.

Cover with foil and put in the oven for 1 hour at 180c/gas 4.

Turn out, slice & serve.
