  • 6 fresh kaffir lime leaves
  • 1 finely chopped stalk of lemongrass
  • 1 teaspoon fish sauce
  • Small bunch of fresh coriander
  • 1 tablespoon Hawkshead Relish Chilli Jam Buy
  • 1 tablespoon Thai curry paste
  • 3 finely chopped spring onions
  • 75g fresh breadcrumbs
  • 450g crabmeat
  • Flour
  • Olive oil
  • Butter


  1. Put all the ingredients except the crabmeat, flour, oil and butter into a food processor and blitz.
  2. Fold in the crabmeat and then check the seasoning and add more if required.
  3. Form the mixture into small patties, dust with a little flour and then fry each one in butter and oil on a medium heat for 3 to 4 minutes on each side.
