Ingredients

  • 2kg meaty pork belly ribs
  • Salt and pepper
  • 2 teaspoons English mustard powder
  • 2 teaspoons paprika
  • 2 tablespoons Hawkshead Relish Westmorland Chutney Buy
  • 2 tablespoons Hawkshead Relish Black Garlic Ketchup Buy
  • 1 tablespoon Hawkshead Relish Worcester Sauce Buy
  • 30g dark brown sugar
  • 400ml chicken stock

Method

  1. Heat the oven to 180°c. Season the ribs with salt and pepper, mustard and paprika. Mix all the remaining ingredients together in an ovenproof dish, coat the ribs and cover with a lid or tin foil.
  2. Place the dish in the preheated oven to cook for 20 minutes, then reduce the heat to 140°c and cook for a further hour. Remove the lid and continue to cook for a further 20 minutes to crisp them up. Brush each rib with the sauce before serving to get them nice and sticky.
