Baked in a loose bottom tart tin, this recipe makes one deep filled quiche and serves 2-3. You can easily double the recipe for a larger deep quiche.
It is delicious as warm but can also make a great lunchbox alternative to sandwiches. Once cooled, wrap in cling film and store in the fridge. It will also freeze successfully for up to one month; remove from the metal tart tin and wrap in cling film and then foil.
