- 275g pork tenderloin fillet, thinly sliced
- 3 tbsp Hawkshead Relish Hot Garlic Pickle
- Juice of 1 lemon & 1 orange
- 3 tbsp olive oil
- 3 tbsp chopped fresh sage
- 15g pine nuts, toasted
- 2 garlic cloves, peeled & finely chopped
- 1 red chilli, seeded & sliced
- 1/2 tsp ground cinnamon
- 1 tbsp clear honey
Remove pork from the dish & put the used marinade to one side. Heat the remaining oil in a large frying pan & fry the pork, in batches if necessary, over a high heat for 4-5 minutes, turning occasionally until just cooked through. Add the left over marinade, boil rapidly for 20-30 seconds until syrupy. Season with salt & pepper.
Garnish with the remaing chopped sage & serve immediately with pasta & a green salad.
