Mango Spice Bars

Makes 12 bars.
Half a jar (or more - depends on taste) Hawkshead Relish Mango Chutney
2 eggs
3/4 pint cup low-fat plain yoghurt
6oz packed dark brown sugar
1/4 pint vegetable oil
2 tbsp dark rum
3/4 tsp salt
2 tsp ground ginger
1 & 1/2 tsp cinnamon
1/4 tsp ground cloves
18oz unbleached all-purpose flour
6oz dried cherries or cranberries
Preheat oven to 180C/350F. Grease a 9 inch square pan.Puree the Mango Chutney in a food processor until smooth. Add eggs, yoghurt, brown sugar, oil, rum, salt & spices, process until smooth. Add the flour & process just until batter is blended. Add cherries/cranberries & pulse to blend. Scrape into the pan & bake in the lower third of the oven for about 35 minutes, or until lightly coloured & a knife inserted near centre comes out clean. Remove from oven & leave to stand on rack for at least 30 minutes. Cut into twelve 3x2inch bars. Serve with vanilla ice cream or yoghurt, if you like.
