Ready Steady Cook Damson & Blue Cheese Scones
One of the winning dishes we made on the BBC television programme was these lovely Damson and cheese scones, I can vouch for the fact that they tasted lovley, and obvioulsy only took less than 20 minutes to prepare and cook. They make an ideal savoury accompaniment for a game dish or stew.
9oz Plain Flour2 tspn Baking Powder4 1/2 oz Butter3 1/2 oz Blue Cheese (Garstang Blue is the one we used on the show, but you could use Stilton)2 Free Range Eggs2 tbspn MilkSalt2 tbspns Hawkshead Relish Pickled Damsons (stoned)Sea SaltPre heat the oven to 220c/425f/Gas7Put the flour, baking powder and butter in a bowl and mix to a breadcrumb consistency, add the crumbled blue cheese, eggs, milk and salt and blend to a dough. Roll the dough into a long sausage shape and cut off rounds approximately 4cm in depth, place on a greased baking tray and press a stoned damson in the centre of each one.Brush with a little milk and sprinkle with sea salt and bake in the oven for about 10 minutes or until the top is cooked and golden on the top.Serve warm with cheese, soup, salads, stews and casseroles.
