Moroccan Chicken
A firm favourite in our house, you can spice it up if you wish but it should be fruity and fragrant, it is a lovely dinner party dish as well as family supper dish.
Using Hawkshead Relish Preserved Lemons and Hawkshead Relish Hot Garlic Pickle
To serve 4 - 6 people2 tspns Hawkshead Relish Hot Garlic Pickle2 tspns Olive Oil 1 Chicken 3-4 lbs/ 1.36-1.81kg cut into 8-10 pieces1 Onion chopped15-20 Green Olives2 Slices of Hawkshead Relish Preserved LemonsWaterPepperFlat leaved parsley - choppedCouscousMint leaves - choppedFlaked Almonds - dry roasted Cut the chicken into 8-10 pieces, leave the skin on and pat them dry with some kitchen paperBlend a little olive oil with the Hawkshead Relish Hot Garlic Pickle to a light paste, rub this all over the chicken pieces, cover and place in the fridge allowing the spices to work their magic into the chicken. (leave for at least 30 minutes or longer if you can).In a large heavy based frying pan heat the rest of the oil to a medium heat, add the chicken pieces, skin side down and sprinkle with pepper (don't add any salt as the lemons are quite salty and you won't need additional salt).When the chicken in browned all over reduce the heat and add the onions, cover the pan and allow to saute slowly for about 10-15 minutes, add the olives, chopped lemon and a little water and simmer for a further 30 minutes. Once the chicken is fully cooked, serve with some chopped mint and a scattering of dry roasted flaked almonds on the top.Serve with couscous, when the couscous is cooked, stir in a little olive oil and chopped parsley to flavour.
